Tasty Tuesday & A Teaser or Two ~ Author T.A. Chase

Thank you for having me today.  I’m T.A. Chase and I write gay romance for MLR Press, among other publishers. I’ve been writing gay-or m/m-romance since 2006 and loving it.
I know this post is supposed to be about food in some way or another. Since I don’t have any story centered around food or foodies, I got thinking about which of my characters had the potential to turn into a foodie and my mind landed on Mordred from my Dragons series at MLR Press.
He and his lover appear in all three Dragon books, but in the first one, Here Be Dragons, he lived in the Realm of Dreams and food probably just appeared without any thought on his part. More than likely, it tasted awesome as well. Since it is the Realm of Dreams, they wouldn’t have yucky food to eat. Lol
By the time we reached Fighting Dragons, Mordred and George are mortal now and living in Dublin, Ireland. Mordred is learning how to cook by watching cooking shows and he’s discovering how much he enjoys it.
So I can totally see Mordred becoming a foodie and an awesome baker because he’s a sensualist. He’d love the taste of the spices and the different complex flavors that can be created with just the right blend of sweet and sour or hot and salty.
I’m not a foodie and I’m also slowly becoming vegan. It’s difficult to keep on track at times because there aren’t a ton of restaurants in my area that cater to vegans. So I make do with what I can if I go out for lunch or dinner.
Of course, like any kind of cooking-vegan or otherwise-it’s much easier to cook at home. I never used to cook, but now I’m finding that I actually enjoy doing it and I love to bake. Though I tend to give the cupcakes and cookies I make away. I really don’t need to eat all of them. lol
Going vegan is a choice I made both for health reasons and moral reasons. I don’t like how we treat the cows, pigs, chickens, and another other animals used to feed us. Plus I’ve found that for me….I feel better.
But I’m not going to preach or anything. Each person makes their own choice on how to live their lives and I’m not about to get into people’s faces about it. Since I don’t want them in mine. Lol
Before I go though, I thought I’d share two of my favorite vegan recipes. I’m not confident enough in my own cooking yet to cook something without one. Lol Maybe someday I’ll create my own recipes in the kitchen.

The second is a cookie recipe for dessert and my thought is if they are too spicy, you can cut back on the cayenne pepper. On the other hand, if you like them spicier, you can add more, whichever you prefer. :)

Chili Pumpkin Cranberry Risotto with Spicy Toasted Pumpkin Seeds
3 lb sugar pumpkin, or any winter squash (butternut, kabocha, acorn, what have you)
2 tablespoons olive oil

1 small yellow onion, diced small

3 cloves garlic, minced

1 tablespoon minced fresh ginger

4 hot red chilies, seeded and thinly sliced

1 1/2 cups arborio rice

1/3 cup dry white wine

5 cups vegetable broth, kept warm on the stove top

1/2 cup dried cranberries

1 cup coconut milk

1/2 teaspoon salt

1/2 teaspoon ground nutmeg (grate it fresh if you can)

1/4 teaspoon ground cinnamon

juice of one lime

 1 teaspoon agave or pure maple syrup
 
For the pumpkin seeds, if using:
2 teaspoons paprika

1/8 teaspoon cayenne

1/8 teaspoon salt
First the pumpkin needs to be roasted. I would suggest doing this well in advance of preparing the risotto for two reasons. One, you’ll need it to cool down so you can peel and chop it. And two, that way it doesn’t seem like you’re cooking for so long and the actual risotto takes only about 35 minutes. If you’re using pumpkin you can also roast the seeds to use as a garnish. Yeah, you can roast the seeds of other squashes, I just don’t think they taste very good.
So. To prepare the pumpkin and seeds: Preheat oven to 350 F. Hack pumpkin in half and remove the seeds and stringy bits with a tablespoon. Reserve the seeds and place them in a colander to clean. Lightly oil a baking sheet and place the pumpkin face down on sheet. Bake for about 35 minutes, or until easily pierced with a fork, but not completely mushy. Once cooled, peel off the skin and chop pumpkin into bite sized pieces.
In the meantime, wash the pumpkin seeds and dry completely with a kitchen towel. Place on a baking sheet and sprinkle lightly with a little olive oil, toss to coat. You can toast them in the oven while the pumpkin bakes, it usually takes about 15 minutes. Toss once or twice. Remove from oven and place in a bowl to cool. Once cooled, sprinkle with the spices to coat.
And now and only now, are you ready to actually start the risotto. Have your broth ready and warming on the stove before you begin.
Preheat a heavy bottomed pot over medium heat. Saute the onion, garlic, ginger and chilies in the oil for about 7 minutes, stirring often so you don’t burn it. Add the risotto and stir to coat with oil. Add wine to deglaze the pot, then add first cup of vegetable broth. Use a wooden spoon to stir until most of the water is absorbed. You don’t have to stir the entire time, just as frequently as you can stand.
Continue adding veggie broth then stirring a few more times, until only a cup of broth is left. When you’re at the last cup, add the pumpkin and cranberries and repeat stirring. When most of the liquid has absorbed, add salt, nutmeg, cinnamon and lime juice. Stir in coconut milk. Cook for about 10 more minutes, stirring occasionally. Taste and adjust salt. At this point you can also add a teaspoon or so of agave. This doesn’t make it sweet per se, it just enhances the natural sweetness of the squash and cranberries.
Let sit for about 10 minutes before serving, to let the flavors “marry.” Scoop into bowls and garnish with pumpkin seeds.
 
Mexican Hot Chocolate Snickerdoodles
Makes 2 dozen Cookies
A beautiful crackle topped chocolate cookie with a spicy cayenne kick and a sugary cinnamon coating. Sold?
For the topping:

1/3 cup sugar

1 teaspoon ground cinnamon
 
For the cookies:

1/2 cup canola oil

1 cup sugar

1/4 cup pure maple syrup

3 tablespoons almond milk (Or your preferred non-dairy milk)

1 teaspoon vanilla extract

1 teaspoon chocolate extract (or more vanilla extract if you have no chocolate)

1 2/3 cups flour

1/2 cup unsweetened cocoa powder
1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon cayenne
Preheat oven to 350 F. Line 2 large baking sheets with parchment paper.
Mix the topping ingredients together on a flat plate. Set aside.
In a medium mixing bowl, use a fork to vigorously mix together oil,  sugar, syrup, and milk. Mix in extracts.
Sift in remaining ingredients, stirring as you add them. Once all ingredients are added mix until you’ve got a pliable dough.
Roll dough into walnut sized balls. Pat into the sugar topping to flatten into roughly 2 inch discs. Transfer to baking sheet, sugar side up, at least 2 inches apart (they do spread). This should be easy as the the bottom of the cookies should just stick to your fingers so you can just flip them over onto the baking sheet.  Bake for 10 to 12 minutes, they should be a bit spread and crackly on top. Remove from oven and let cool for 5 minutes, then transfer to a cooling rack to cool completely.

Hi Erin, can you tell us a little about yourself?

I’m 30 years old, been married for 12 years and have a beautiful 8 year old daughter and a handsome 4 year old son. I work full time, and try to squeeze in “retreat” weekends for my writing at least once a month, or every other month. I love writing and the possibilities of what can happen with my characters.

What did you want to be when you were growing up or did you always want to be a writer?

Actually, after I married my husband at 18, and fell in love with my favorite Author, Lynn Kurland, I secretly wanted to be a writer. But since I’d never been to College, I wondered if I could even pull it off and left it as a lofty goal that I would one day do before I died. Growing up as a kid, I wanted to be a Veternarian, but quickly realized I don’t like science, and hate needles even more.

When did you first start writing?

Three years ago, I dipped my hands in Fan Fiction. Haha. Funny now that I look back at it. I went to my first local chapter of the RWA in January, 2010. My writing has grown to a level I never thought to achieve before I turned 30. I attribute a lot of my success to going to meetings, participating in online classes, and openly listening to critiques on my work.

What is a typical writing day like for you? 

I typically do it a whole day at a time, which is about once a week. I start in the morning, go to my local coffee shop, plug in my laptop, put in my headphones, and start typing away. I layout a plan the night before with scenes that I want to accomplish by writing one scentence blurbs on each scene. It gives me enough information that I’m able to write a full chapter, or until the next point of view break.

Do you have any specific routine you follow or specific items you need with you when you write?

Yes, I need to be “away” from it all. I can’t write at home. Too many distractions with my kids. I have to step away, put my headphones in, and just focus on telling the story in a seamless manner.

What is your favorite part of writing?  Is there anything you don’t like about being a writer?

I love maneuvering characters in different ways, and seeing how they react to the situations they are thrown into. I mean, I have the jist of it down, but about halfway through the book, my characters seem to take a mind of their own and I’m just a vessel to be used in the transformation of their story. Plotting. I absolutely despise plotting. It is the most difficult thing for me. I mean, I can plot a few scenes in advance, but in order to properly execute a book, you need to plot the entire thing in advance, then the small scenes along the way. I don’t have a problem with the short term, but with the overall picture and trying to capture in in a way that will be executed seamlessly.

What is your favorite length of book to write?  (Short story, novella, full length novel) Why?

I think my most favorite to write is a full-length novel, even though Pillars In Time is a novella. I like having the time to set up the story and execute it in a way that people can follow without the story feeling rushed, or unrealistic.

How does your family feel about your writing and you being an author?

They love it. My 8 year old daughter especially. She is so proud to go to school and tell all of her friends that her mommy is a published author. My husband, who is a High School Teacher at our childrens school (Private School K-12), hears all the time about how students buy my book and love it. My daughter is my best cheerleader, and my husband is my champion. Without my husband’s support, especially with the young kids, I wouldn’t be able to get time to ever write.

Is there a to-be-read waiting on your bedside table?

Yes, the latest Lynn Kurland novel. My problem is that I work 12+ hours a day, 6+ days a week, on top of writing myself, and being a wife and mommy, I don’t have time to sit down and read. What I do have time for is listening to books on tape. I’m a member to Audible.com and I listen to probably 1 book a week in the mornings while I’m working (I’m Bi-Polar and can majorly multi-task…lol).

Just for fun, I have a few personal questions,

1)          Favorite Holiday

I’m torn between Thanksgiving and Christmas. I think I like Thanksgiving more because I get to host it at our house.

2)         Favorite Drink

What kind? LoL. I think my FAVORITE drink is 7-up and Cranberry Juice mixed together….SOOOOO refreshing

3)         Favorite Author

Lynn Kurland

4)         Favorite Book

I know this sounds bad for being an author, but I don’t think I have one.

5)         Favorite Animal

Cat – because they are so self-sustaining. I tried the dog thing and though I love them, they are just not for me and my crazy/busy lifestyle.

And for a bonus:  What is a typical mood for you?  And is your mood different when you’re writing?

I’m a pretty happy-go-lucky person. I’m rarely caught in a bad mood, and when I am in one, it typically lasts for less than 5 minutes. I’m very bubbly and love to serve people (i.e. that’s why I love my job being a Mortgage Loan Processor). I wouldn’t say my mood is different when I’m writing, except with the exception of the scenes that I write. If I’m writing a scene with angst in it, I found that I’m wound up tight. When I write a scene where love is overflowing, I find that I miss my husband. So, I’m affected by the scenes I write, but my overall mood is the same.

Before we let you leave us today, would you be willing to share a recipe with us?  I love to cook and am always looking for new recipes to try and share :)
 
 
Always a major hit when I host parties are the following two dips that I make.

Guacamole:

6 Avocados
2-3 minced cloves of garlic – or 1.5-2 tsp
1-2 minced Serrano Chili Pepper
½ Sweet Onion – chopped
1 Anaheim Chili Pepper (or known as Passilla), minced
2-3 Grape Ripened Tomatoes, Chopped
1 Lime, cut in half, and squeezed into mixture
Salt – to taste
Cilantro – 3 tablespoons chopped up

Mash together, add salt and garlic to taste, add additional Serrano’s if not spicy enough. Serve.

 

Artichoke Dip

You need a pie dish & set your oven to 350 degrees

2 Cans of Artichoke Hearts – Chopped & set aside
16 oz of Cream Cheese (let this sit out for an hour so it is easy/smooth to mix)
2 cups of Mayonaise
2 cups of Parmessean Chees
2 Jalepeno Peppers – Minced

Keep 8 oz of the Parmessean Cheese set aside. Mix/Cream all other ingredients together, move to pie pan. Take remainder 1 cup of cheese and sprinkle on top of mixture. Cover with tinfoil, put in oven for 25 minutes. Remove tinfoil and keep in oven for a remainder 10-15 minutes.

Author, author...

...read all about it !

Welcome Sinead, so great to have you here with us.  Can you tell us a little about yourself?

I always have trouble with this one, so bear with me. I’m a born-and-raised Canadian, so US and UK readers might find my spelling and grammar a little odd. We have this strange mix of both types of English.

I’m creeping up on 42 years of age, happily married the second time around, and a mom to two toddlers, three and four years old. No one ever sees photos of my little ones, because I’m overprotective online. Lol.

I like to dabble in a lot of crafty things, but writing is my first and greatest love. I like to tell people that I bleed words and breathe music, (but I’m a horrible singer). I have a weird sense of humour, (there’s that Canadian spelling), and I babble when I’m nervous.



Do real life events find their way into your stories?

Oh, absolutely! They aren’t always events in my life, though. Sometimes they’re events I’ve heard about second and third-hand, and my imagination has embellished them. However, in “Learn To Love Me”, the scene where Emily first meets Alex comes straight out of my life. I’ve twisted it slightly, of course. In real life, ‘Alex’ and I were both extremely embarrassed by the whole thing, but over time we became dear friends.

I asked his permission to include the scene in the book and, thank goodness, he agreed, wholeheartedly. We still laugh about it, often.


Do you ever mimic family members or people you know when you choose characters?

I don’t mimic people exactly, but I often borrow traits from people I know. A character may use a friend’s favourite phrase in dialogue, often.  I might ‘borrow’ the way they suck the air out of their teeth, or wink whenever they say something sarcastic, to let people know they’re joking. Most of my characters are a compilation of several people I’ve met. Sometimes, I observe people I’ve never met, though, trying to guess their story. I get some great characters with that exercise.



Do you find yourself going back to the same inspiration for each story or is it always something different?

Questions, music and emotional experience are my main sources of inspiration. The questions, when I remember to write them down are the odd things I think, like, “Why does ‘I’m sorry’ become more reflex than sincerity, for some people?” The questions are always different.

I do tend to fall back on familiar songs, when I’m looking for a certain atmosphere for a character. They’re songs that help me remember the personal emotional experiences that I can use to fuel the character in a scene. Each character ends up with their own playlist by the time I’m done. Emily, in “Learn To Love Me” swayed back and forth between Sarah McLachlan songs and Disturbed, a lot.



When do you write?  Early morning? During the day sometime or all day?  After the kids go to bed?

I really can’t write until the children, hubby and cat are all sleeping. Most of my writing happens between ten o’clock at night and two o’clock in the morning. The daytime is for playtime with the kiddies, social networking and promotions. Evening is the children’s bedtime ritual, including stories and songs, and then a few minutes with my husband. The night is when I can focus on creating.



How do you feel about marketing your book?

I sometimes feel a bit like a hawker at the fair, asking people to buy my book, or review it, so others will buy it. I really love connecting with the readers, though, and hearing their feedback, so it’s a necessary part of the process for me. If I don’t market, I won’t have readers to connect with.



What social sites do you feel work best for marketing?

Right now, I tend to use Facebook the most. I’m still learning how to use Google + and Goodreads. Twitter tweets scroll by so fast, it’s hard to get a conversation started with more than one person. With Facebook, it’s much simpler to really engage with the friends and fans I have. Perhaps Google +, being more like FB than Twitter, will take over one day. First, I’d have to learn more about it, but that would cut into my writing time. I’m not ready to make that sacrifice just yet.


Do you like to pitch stories to your publisher or do you wait until you have written the story and have a final manuscript to turn in?

Although I like the idea of pre-approval on a concept, I really prefer to have the finished manuscript before I approach my publisher directly with it. Pitching would require that I know the story, start to finish, before I begin writing. Though I don’t object to outlining, I’d rather keep it flexible.



Is there any other genre that you would love to try writing?  If so, what is it?

With two toddlers in the house, I’d love to take a shot at a children’s book!



Do you always/ever see yourself as the heroine/hero when you write a story?

I wouldn’t say that I see myself as the main character, rather I become each of the characters when I write. I enjoy writing in the first person, because that’s what feels the most immersive for me.  I like to step into the role of each character, even the ‘bad guy’. Nearly every character has a touch of me, because I bring my own perspective to each of them in some way, but none of them is truly me.

Oooh, that’s a tough one. A hobby-farm between Bracebridge and Hunstville, Ontario. Lol. That’s cheating a bit, I know, but I really love my home province. As much as I’d like to see the world, home would still be here, just farther north.

Is there an upcoming or current release you would like to share with us today and where can we find it?

“Learn To Love Me” is my debut novel, and it release three days ago! It’s a comtemporary crime fiction novel and I think the blurb gives a good idea of the story.

Despite her secret past, Emily O’Shea was finally living a normal life. There had been some arguments with her husband, Trevor, lately, but no marriage is perfect. At least the column she writes for the local paper is going well…that is, until one of her interviewees goes missing, and a monster from her past resurfaces.

Within a week Emily’s life spins into chaos. Missing girls, a telephone stalker, murder, a monster, and an intense ex-lover; it’s turning out to be one hell of a summer!

Her husband is acting erratically, her boss is threatening to pull her column, and the police suspect she’s the muse for a murderer. Can Emily save her marriage, her job, her life and her sanity? More importantly, are her darkest fears justified? Does Emily already know who the killer is and, if she does; can she do anything to stop them?”

*Last thing before we let you leave us today, do you have a favorite recipe you'd like to share?  I like to cook and am always looking for new recipes to try and share but it's totally up to you.

Oh, I love to share recipes! I’ll give you an entrée AND a dessert!

First the Entrée, or I should say Side-dish
Easy Cheesy Mushroom Rice

Ingredients
I can of Condensed Cream of Mushroom Soup
½ cup milk
1 cup water
I tbsp. dried onion (or ¼ onion finely chopped)
1 tsp. dried oregano
½ tsp. dried basil
2 tsp. dried parsley
½ tsp. powdered garlic (NOT garlic salt)
½ tsp. celery salt
1 tsp. black pepper
3 heaping tbsp. cream cheese or cheese whiz (or both if you really like cheese)
Instant Rice
¼ cup grated parmesan cheese (or ½ cup if you really like cheese)

This one is really simple
Put the soup, milk, water, spices and cream cheese/cheese whiz, into a med.to large sauce pot. (I like to grind the spices fine, with a pestle, first). Whisk the ingredients together and heat on med/high until the soup begins a rolling boil. (Continue whisking to prevent burning and blend the ingredients thoroughly. Remove from the heat and quickly stir in instant rice until the mixture resembles really runny oatmeal. Cover and let stand, off of the heat, for 10 minutes. Add the parmesan cheese and mix thoroughly. Serve.

This is a favourite of mine. It will easily serve 6 people with plenty of leftovers. If you want to make it a complete meal, add cooked ground beef, chicken, turkey or pork, and serve with a vegetable. I also like to add diced fresh mushrooms to the pot before I start cooking the soup, when I have them on hand.

Now for the dessert, and another favourite of mine.
Simple Stovetop Cheesecake

You’ll need:
One graham cracker pie crust, pre-baked
2 tbsp lemon juice
3 eggs
1 egg white
1 pkg. light cream cheese
1/3 cup granulated sugar
¼ tsp. salt
1/3 cup 1% or 2% milk
1/8 tsp. nutmeg
Pie filling, fresh fruit or chocolate for topping.

Note: It’s important to pre-measure all of the ingredients for this recipe, and you want to make this at least two hours before you plan to serve it.

In a small mixing bowl, whisk together the lemon juice, eggs and egg white.
In a med. sauce pot, cut the cream cheese into cubes or slices and melt over low heat.
When the cheese is all softened (starting to bubble), add the sugar, salt, milk and nutmeg and whisk.
Increase the heat to med.-high.
Whisking continuously pour in the lemon/egg and whisk more slowly until the mixture begins to part behind the whisk.
Remove the pot from the heat and immediately pour the mixture into the graham cracker crust.
Let the mixture stand for one hour at room temperature and then top with your preferred topping. (I like to use half a can fruit pie filling and some fresh fruit, or for a lighter dessert, cool whip light and fresh fruit.)
Refrigerate for at least one hour before serving.
