Hi, my name is Jane Ainslie, and I’m very happy to be visiting Krista’s blog today (thanks Krista!) I currently live in Adelaide, which is a small city on the edge of a desert in South Australia. I live here with my husband, and our four pet ferrets. When I’m not at my desk writing, (or telling the ferrets off for stealing my shoes and hiding them around the house), I work as a registered nurse in a big, public hospital. I have two books published so far; ‘Chai for Beginners’, which I had published in India, and ‘Her Sister’s Wedding’, which has been published in America by Decadent Publishing.

 

Along with writing, one of my other passions is cooking, so I was delighted when I discovered Decadent Publishing had a genre called foodie romance! What a perfect combination – food and love.  Her Sister’s Wedding is a contemporary romance about Australian food journalist Mandy, and American celebrity chef Jake. They meet in Melbourne when they both have to attend Mandy’s sister’s wedding. The attraction is instant and their affair features lots of lingering looks over delicious meals and drinks.

 

Which leads me to my recipe for today. At the moment it’s summer here, which can be a difficult time of year. Recently, we had a massive heatwave, and I had to get creative about what to cook. During these heatwaves, it gets so hot you can’t use the oven, because it heats the house up too much. Salads are fine for one or two nights, but after that, a gal needs to drag out her cookbooks and get inventive. So today, I’m going to share a lovely chilled soup recipe that requires no cooking in its preparation. It might sound a bit odd, but trust me when I say, I’ve never met anyone who doesn’t love it, and it’s super simple to make. Of course, if you are in the middle of a polar vortex type weather event, you might want to follow this with a hot, sticky date pudding with cream…

 

CHILLED YOGHURT SOUP

2 medium cucumbers

2 cups of Greek yoghurt

2 cups of chicken stock

1 large clove of garlic, crushed

3 tablespoons of chopped fresh dill

1 cup of chopped walnut pieces

Salt and pepper to taste

 

Method: Grate the cucumbers into a saucepan, then add in the yoghurt and stock. Whisk until blended, then add all other ingredients. Chill in the fridge for a couple of hours. Serve with crusty bread and a cooling drink.
