Just as promised, another recipe today. This recipe i got from a wonderful fellow member of the Wicked Writers Yahoo Group I belong to. The group link is listed under "Favorite Links" on my blog home page.
Pumpkin Bread
2/3 Cup Oil
3 Cups Sugar
4 Eggs - Well beaten
2 Cups or 1 15 oz Can Pumpkin
Beat the above 4 ingredients together until fluffly
2 teaspoons Baking Soda -- Dissolved in 2/3 Cups Hot Water
Add the Baking Soda water to the pumpkin mixture & stir til well blended.
Sift together (I don't actually sift but this is what the recipe says):
3 1/2 Cups Flour
1 teaspoon Baking Powder
1 teaspoon Salt
1/2 teaspoon Cloves
1 teaspoon Cinnamon
Add the flour mixture to the pumpkin mixture and stir until all is well blended together. Bake at 325 degrees for 1 hour. Pour into 2 greased regular size loaf pans or 4 greased small loaf pans. Do not fill the pans over half full.

Tuesday/Thursday Recipe of the Day :)
Sweets anybody?? Who doesn't like chocolate, or at least knows someone that likes chocolate? Well this recipe is very easy and doesn't warm your kitchen on a hot summer day, as alot of us have been having. Just hope you have some extra frig space :)
Chip's NO BAKE Fudge Oatmeal Cookies
2 c. sugar
1/2 c. butter
1/2 c. cocoa
1/2 c. milk
1/2 - 1 c. peanut butter
1 t. vanilla
3 c. oatmeal
In large pan, combine sugar, cocoa, milk and butter. Bring to a boil. Boil for 1 minute then remove from heat. Stir in vanilla and peanut butter til melted. Stir in Oats. Drop by teaspoonfull onto baking sheet(s), 2" apart. Refrigerate 1 hour. Store in refrigerator until gone.
