Welcome to Monday Madness...

I have NEVER been a fan of Mondays.  I never wanted to go back to school after the weekend.  I never wanted to go back to work after the weekend.  Inevitably, it always seemed like the craziest day of the week, why is that?  Did everybody forget everything over the weekend and then have to scramble to catch up or prepare?  Well even if I'm not in school anymore or not going to work anymore, it's still crazy.  My kids never want to get up on Monday morning after they've sluffed off and played all weekend.  They are the definition of grumpiness, well they're like that every morning but more so after the weekend.  I, on the other hand love Mondays now only because the house is soooooo quiet and you know what that means?   Woohoo, that means I can run around half naked yelling at the top of my lungs....no wait, that's not it haha.  Well I suppose I could do that cause no one would know but sorry, not admitting to anything like that.  No, Monday is now the first day of a great writing week. 

It's also a good day for a recipe...or two!

Fast Fruity Delight

Crust  (I always make from scratch):(you can buy too if you'd rather)
      1 package graham crackers, crushed
       1 stick butter, melted
       1 tbsp. sugar
   Mix and press into a deep dish pie plate, just the bottom is ok


Filling:
       1 box (3 oz) Jello, any flavor
       2 cups frozen fruit, coordinating with Jello flavor
       1 8 oz. cool whip
       3/4 cup boiling water

    Add boiling water to jello gelatin in a small mixing bowl.  Stir until dissolved.  Stir in the 2 cups frozen fruit until Jello starts to thicken.  In a medium bowl, add a 1/2 cup of the jello/fruit mixture to the 8 oz. cool whip.  Whisk until blended.  Spoon over the crust.  Top with the rest of the jello/fruit mixture.  May add more cool whip to top if desired.  Refrigerate til set up, a couple hours is good.

Slice and serve

Lemon Pound Cake

Cake
1 Any brand Lemon cake mix (follow directions on box; substitute milk for the water)
1 box lemon jello
1 tsp. lemon extract

Combine the cake mix and the lemon jello together.  Add ingredients from the cake mix box, don't forget to substitute milk for the water and add the lemon extract. (I imagine you can use a loaf pan, or a bundt pan.)  Bake according to the box directions.


Icing
1 stick butter
1 box powdered sugar
1 tsp. lemon extract

Melt butter on stove top, add sugar and lemon extract.  Spoon over top of cake while warm.

  2. I couldn't agree more about Mondays though my husband's work schedule now puts him at home with me on Mondays and most Tuesdays. Sometimes that's a good thing- grocery shopping without the kids! Yay! But on Mondays when I'd like my quiet writing time after a noisy houseful over the weekend, I'd just as soon spend that time in the dark recesses of my writing cave! LOL Sometimes my brain forgets and thinks Wednesdays are my Monday. ;)

    As for the desserts! Yummy! Those both sound great. Thanks for sharing. will definitely have to snag them.

    1. Lol nice Taryn, I agree with you about the husband thing. When mine is home during the week, I find myself spending time with him and getting nothing done. It's rare that he's home anymore but when he is sometimes we get our kidless running done too. Thanks for stopping, hope you like the recipes. I made the pie last night with strawberries, my kids loved it.
