Weekend story......Kindness in the world !!

Hi everyone, 

I just have to share something that happened this weekend.  My spouse and I went out on Saturday night.  OK now that might be a normal thing for some but with 4 kids, we don't do that often.  So, kids were at grandma & grandpa's and we were headed out of town to find a theatre to watch Paranormal Activity 2.  Not every one's choice i know, but we like those kinds of movies.  Anyway, we end up finding a theatre playing that movie and it's a 7:05 show and it's 5ish so we decide to go out for dinner.  Outback is a favorite and we settle in at the bar, order drinks and an appetizer and our dinner.  Shortly after receiving our appetizer, a couple sits down next to us and the gentleman strikes up a conversation about the football game playing at the time.  He's a Michigan fan and us Michigan State fans, the men definitely had things to discuss.  The gentleman's spouse joins him and we really strike up some conversation, discussing our families and jobs, how we met and what we did in our spare time, including my writing.  We covered everything.  This couple was so nice and we wish now we had just simply asked their names, how foolish to let that one detail slip away.  We ate our dinner, delicious by the way, and finished our drinks but the wonderful couple had finished their drinks first and decided it was time for them to be going so we said our goodbyes and they left.  We then placed our credit card on the bar with the bill and the bar tender then tells us, "you're all set, the couple that just left paid your tab."  We were both in shock.  We had never met that couple before that night.  How unbelievably kind was that and how many people are there left in the world that do that sort of thing.  They were the kind of people we really hit it off with and would love to keep in touch, and of course repay the gesture in some way.  I did give the woman my blog address and email so i really do hope i hear from her.  We would love to at least thank them for that most generous gesture.

Tuesday's Recipe of the Day

Pumpkin Gooey Butter Cake

Time continues to get away from me and it drives me crazy :)

Before i lose the whole month and in honor of the season, i am posting a yummy sounding recipe, another that my wonderful mother found!!



Pumpkin Gooey Butter Cake

Ingredients:
Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted

Filling:
1 15-ounce can of pumpkin
1 8-ounce package cream cheese, softened
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg


Directions


Preheat oven to 350 degrees.

To make the cake, combine all of the ingredients and mix well. Pat the mixture into a lightly greased 13x9-inch baking pan.

Prepare filling:

In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter and beat together.

Next, add the powdered sugar, cinnamon, nutmeg, and mix well.

Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey.

Serve with fresh whipped cream.

OCTOBER ~ the colorful start of many things to come......

Where in the world does the time go?  October is my favorite month and Autumn is by far my favorite season.  The leaves have been turning in northern Michigan and its just breathtaking.  It's unfortunate that i can't remember where September went.  Before we know it, Winter will be here and I am so not ready for Christmas.  However, i am excited for December as i will be doing an interview with a fantastic author and a great friend, Renee Vincent.  She has graciously scheduled my blog in on her book tour for her newest release,  Mac Liam, Book 2 in her Emerald Isle Trilogy and i couldn't be more thrilled.  Mark your calendars for December 7th and i will send out reminders as we get closer.  Can't wait :)  To find out more about this great author, visit her website; http://www.reneevincent.com/.  You can also find the link on the side bar of my home page under Authors.

Ok, here we go,not reading this yet but next on my list as a re-read before i buy the newest ones. Excerpt from pge 56.


"Just a hug, Kelly-baby?"  He whispered the words, his lips quirking gently.  "I dream of your hugs, darlin', just as much as I dream of your kiss."

"It's real easy, baby," he crooned, his dark velvet voice washing over her.  "You just lift your arms and put them around my neck."

He let go of her hair, fingers curling around her wrists as he lifted her arms, urging them up until they curled around his neck. 

"Then you come up real close to me, so I can hug you back." 

His arms went around her, slowly, so slowly, pulling her against him until her head rested on his chest.



Yummy......i'd take one of those hugs for sure !!!

Thursday's #2 Recipe of the Day :))

Better late than never i guess........i need to have more than 24 hours in a 24 hour day to get everything done!

OK, the last recipe for the week and a dessert.  I believe next week I'll forgo sweets and get down to the main dish !!


Pear Upside Down Cake

What You Need

3 fresh pears (1 lb.), peeled
3/4 cup packed brown sugar
1 tsp. Pumpkin pie spice
1/2 cup Dried cranberries
 1 pkg. (2-layer size) yellow cake mix
 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
4 Eggs
1-1/4 cups Water
1/4 cup Oil
2 cups thawed COOL WHIP Whipped Topping

Make It

HEAT oven to 350ÂşF.


CUT pears lengthwise in half; remove cores, then cut pears lengthwise into 1/4-inch-thick slices. Arrange on bottom of 13x9-inch pan sprayed with cooking spray. Mix sugar and spice; sprinkle over pears. Top with berries.

BEAT next 5 ingredients with mixer until well blended; pour over ingredients in pan.

BAKE 35 min. or until toothpick inserted in center comes out clean and cake begins to pull away from sides of pan. Cool 10 min. Run knife around edges of pan to loosen cake. Place large platter over cake; invert cake onto platter. Gently remove pan. Cool cake slightly. Serve topped with COOL WHIP

Almond Mint Delight

1 bag crushed peppermint sticks
1 24 oz. pkg. Almond Bark
Wax Paper & Cookie Sheet


Melt Bark in Microwave until completely dissolved.  Mix in crushed peppermints.  Pour mixture onto wax paper placed on cookie sheet.  It will be thin.  Let sit til completely hard and break into small pieces.  Store in airtight container.

Ok, since i was lost for a week or so and didn't post my normal Tuesday/Thursday recipes, i'll post 2 each this week to make up :)


Yummy Cherry Cake

1 can Cherry Pie filling
1 Lg. can crushed pineapple
1 box yellow cake mix
1/2 stick butter
chopped nuts

Spread pie filling in 9x13 pan, top with crushed pineapple, sprinkle dry cake mix over all and then chopped nuts if desired.  Drizzle with melted butter and bake at 350 for 35 to 40 minutes, until bubbly and light brown.

No Bake Cheesecake

You will need:

1 graham cracker crust or 12 mini graham cracker crust
1 (8oz) cream cheese
1/2 cup sugar
1 (8oz) cool whip
1 can any fruit pie filling.



Mix- cream cheese and sugar and cool whip together - put in shells or shell and top with filling. Put in refrig. to let get cold.

Could it be any simpler?  Thanks Mom!

Tuesday/Thursday Recipe of the Day :)

Hello there,

Thursday already? Where does the time go?

Just as promised, another recipe today. This recipe i got from a wonderful fellow member of the Wicked Writers Yahoo Group I belong to. The group link is listed under "Favorite Links" on my blog home page.


Pumpkin Bread

2/3 Cup Oil
3 Cups Sugar
4 Eggs - Well beaten
2 Cups or 1 15 oz Can Pumpkin

Beat the above 4 ingredients together until fluffly

2 teaspoons Baking Soda -- Dissolved in 2/3 Cups Hot Water

Add the Baking Soda water to the pumpkin mixture & stir til well blended.

Sift together (I don't actually sift but this is what the recipe says):

3 1/2 Cups Flour
1 teaspoon Baking Powder
1 teaspoon Salt
1/2 teaspoon Cloves
1 teaspoon Cinnamon

Add the flour mixture to the pumpkin mixture and stir until all is well blended together. Bake at 325 degrees for 1 hour. Pour into 2 greased regular size loaf pans or 4 greased small loaf pans. Do not fill the pans over half full.

Tuesday/Thursday Recipe of the Day :)

Sweets anybody?? Who doesn't like chocolate, or at least knows someone that likes chocolate? Well this recipe is very easy and doesn't warm your kitchen on a hot summer day, as alot of us have been having. Just hope you have some extra frig space :)

Chip's NO BAKE Fudge Oatmeal Cookies

2 c. sugar
1/2 c. butter
1/2 c. cocoa
1/2 c. milk
1/2 - 1 c. peanut butter
1 t. vanilla
3 c. oatmeal

In large pan, combine sugar, cocoa, milk and butter. Bring to a boil. Boil for 1 minute then remove from heat. Stir in vanilla and peanut butter til melted. Stir in Oats. Drop by teaspoonfull onto baking sheet(s), 2" apart. Refrigerate 1 hour. Store in refrigerator until gone.
